The summer season is here!


Summer brings much excitement and liveliness to the Cellar Door & Jack’s Raw Bar at Cloudy Bay. The season is filled with events, outdoor service and sees a significant increase in patrons.

As we approach this season, we’re looking for an enthusiastic Jack’s Raw Bar team: A Chef and his Sous-Chef who can bring their flair for hospitality to craft a memorable Cloudy Bay experience for our guests. Jack’s Raw Bar is open seven days, so successful applicants will need to be available to work flexible hours including weekends and public holidays from end of November through to April.

As Jack’s Raw Bar is partnering with the Award-winning Chef Sachie Nomura to design sophisticated Japanese recipes, the successful candidate will receive a full training from Sachie’s Kitchen to deliver ultra-modern Japanese dishes from the supply, planning and preparation to customer service. You will use seasonal and local products which lends perfectly to the Cloudy Bay wine experience. Bring your food experience and top-standard customer service ability to create authentic gastronomic experiences for our guests.

 

The Chef and Sous-Chef will be responsible for:

 

  •  Delivering exceptional customer service to all visitors of Cloudy Bay through Jack’s Raw Bar
  • Managing the daily food stock take, products shelf life and ordering.
  • Maintaining a consistently high quality level of food for clients and staff
  • Food making including shucking shellfish, oysters and slicing ham 
  • Assisting with table set up and break down
  • Ensuring that Jack’s Raw Bar and the back kitchen is maintained in a clean and tidy state
  • Ensuring dishwashing

 

To succeed in this position, you will have:

 

  •  Significant experience as a Chef (for the Chef) or Kitchen Hand (for the Sous-Chef) with excellent food making techniques and practices
  • An enthusiastic and team-oriented mindset
  • The Chef will have experience in managing a kitchen hand and a full kitchen in total independence
  • Experience in working as a Chef or Sous-Chef in busy and pressured environments with high-quality standards
  • Willingness to learn new techniques and discover a new gastronomic environment with Sachie’s Kitchen and also to learn about wine.
  • Desire to discover wine and how to create harmonious combinations with food
  • A high standard of personal presentation with a friendly and genuine attitude
  • High energy and a positive, pro-active approach with an attention to details
  • Excellent presentation and communication skills aligned with Cloudy Bay brand's standard
  • Excellent planning and organizational skills
  • Adaptable and flexible for rosters and working arrangements
  • Physical aptitude: standing on feet all day, manipulating and shucking seafood, shellfish and oysters, lifting trays of dishes
