We are a closed wine tasting, cafe, wedding venue to be reopened with the new owner established on the outskirts of  Hanmer Springs. We're  looking for a confident, skilled and enthusiastic General Manager, Restaurant manager, who takes the responsibility of organising and controlling the overall operation of the restaurant, wine tasting, wedding venue to provide the best experience to all the customers.

Duties and responsibilities include:

- Take the responsibility to manage the whole restaurant operation,  wedding venue, wine tasting, independently and confidently.

- Responsible for arranging the purchasing and pricing of goods according to the budget.

- Responsible for maintaining records of financial reports and stock level.

- Organise marketing activities, such as advertising, promotional events, and discount schemes.

- Take bookings and arrange functions as per the customer requirements.

- Willingness to work in a fast-paced environment and long working hours.

Duties and Responsibilities 

1. Ensure profit are maintained & agreed costs are not exceeded through effective control-systems, including, auditing against dockets, sales analysis, menu costings and cash checks.

Prepare & submit in the required format all information necessary for accurate budgeting purposes.

Submit all required reports to the owner.

2. Oversee and supervise operations of the restaurant and the function/catering operations

 • Ensure all staff are aware of their duties and what is expected of them

• Teach new staff skills they require to perform their roles to the required standard

• Ensure the prompt and efficient service of all meals, snacks, beverages and functions in the required standard.

 • Ensure restaurant is clean and well maintained.

• Ensure efficiency in the day-to-day running.

Be available for functions as they arise to ensure that the food is prepared and served as required

Act as Duty Manager as required.

• Ensure consumable and non consumable goods are ordered, correctly stored and issued

• Ensure maximum security in all areas under your control and staff are fully aware of the importance of security.

Ensure standard hygiene are maintained in all areas.

Attend promptly to customer complaints.

Prepare weekly floor staff roster plan (Head chef to prepare kitchen roster)

Take the necessary steps in the event of theft, burglary or fire.

3. Manage Restaurant stocks and operating supplies  • Ensure wastage is minimised by careful supervision of stock levels and usage

 • Ensure hygienic storage methods are utilised to prevent food loss

• Ensure the security of all alcoholic and non-alcoholic drink stocks

•  Oversee the ordering and control of stock levels

5.  Manage the Function/ Catering business as required

• Assist the day-to-day running

6. Carry out other tasks as required by the Owner

 • Pay careful attention to the operating budgets to ensure that costs are controlled to maintain the correct levels of spending

 QUALIFICATIONS:

- Studies completed in Hospitality Management is required, at least 2 years Managerial experience in a Dining Restaurant, and an overall 5 years relevant hospitality experience with wine and functions experience is a must.

- Valid Duty Manager Certificate required

- Worked in the field or around wine tasting

-  The ability to setup a cafe from scratch 

- Experience in running functions eg Weddings, small groups

You must be able to work weekends, and public holidays
