Rosella is seeking an experienced wine enthusiast to lead service and be responsible for the development, curation, and execution of our wine programme across the venue. You'll be passionate about all things wine, terroir, geography, wine-making methods, and education, while having a desire to share this enthusiasm to all around you.
This is an opportunity for someone with a strong interest in wine to take ownership of a currently recognised wine list that supports both a busy restaurant environment and a vibrant walk-in bar offering.
You will be responsible for shaping a wine programme that evolves alongside our food, working closely with suppliers, selecting producers, and contributing meaningfully to the direction of our offering. This role will entail both service shifts and admin time throughout the week.
Rosella draws inspiration from the bold, vibrant flavours of the Mediterranean, North Africa, and the Middle East. We’re known for thoughtful wines, modern cocktails, and energetic service with the bar and wine offering playing an integral role in the guest experience.
This is a hands on leadership role for someone who thrives in fast paced service, enjoys mentoring a team, and is equally comfortable discussing wine with guests as they are managing operational responsibilities behind the scenes.
In this role you will
Lead Service:
- Run and oversee wine service throughout busy shifts
- Support the floor team in delivering a remarkable guest experience
- Maintain high standards of beverage service and presentation
- Foster a positive team culture through training and mentorship
Manage the Beverage Programme:
- Be responsible for the curation and ongoing development of Rosella’s wine list
- Work closely with suppliers to source wines aligned with our menu
- Contribute to seasonal cocktail development alongside our lead bartender
- Ensure consistency and quality across all beverage offerings
Operational Responsibilities:
- Inventory control and stocktakes
- Overseeing invoice entry and cost control (COGS)
- Supporting ongoing staff beverage training

A current Manager’s Certificate is preferred.
