Millennium Hotel Queenstown is a well-established, premium hotel in the heart of one of New Zealand’s most iconic destinations. We are seeking a hands-on, driven Food & Beverage Manager to lead our front-of-house operations across all food and beverage outlets, ensuring every guest enjoys a seamless and high-quality experience - from breakfast through to evening dining, bar service, and events.
As our Food & Beverage Manager, you will oversee the full operation of the hotel’s restaurant, bar, and associated dining services, including:
- Leading a busy breakfast and daytime service, while ensuring a seamless transition into refined evening dining and bar operations
- Managing multiple outlets and service styles, including restaurant dining, bar service, in-room dining, and functions/events
- Working closely with hotel leadership and Kitchen team to deliver consistent quality, efficient service, and exceptional guest satisfaction
- Contributing to menu development, including food and beverage offerings, wine lists, cocktails, pricing, and seasonal updates
- Overseeing stock control, ordering, cost management, and ensuring performance aligns with budget expectations
- Managing conferences, functions, and private events to a premium standard
- Coaching, mentoring, and leading the front-of-house team to achieve high performance and strong service delivery
- Ensuring all Health & Safety, licensing, and compliance standards are met and maintained
This is a hands-on leadership role - you will be highly visible on the floor, supporting your team through busy service periods, guest interactions, and special events.
We are looking for a hospitality leader who brings professionalism, energy, and a strong guest focus. You will have:
- Proven experience managing restaurant, bar, or multi-outlet hotel F&B operations
- Strong background in premium food & beverage environments, ideally within hotels or high-volume venues
- Sound knowledge of bar operations, wine service, and delivering elevated guest experiences
- Experience in menu development, pricing strategies, and stock management systems
- A hands-on, lead-from-the-front leadership style
- Strong financial acumen, including budgeting, forecasting, and cost control
- Excellent communication skills and the ability to build strong relationships with guests and team members
- The ability to perform under pressure in a fast-paced environment
- A passion for developing teams and delivering service excellence
- High personal presentation and professional standards
